Talk about the loaf that works overtime! Banana bread makes the perfect breakfast, snack, dessert, and lunchbox treat!
Ingredients
- 120 milliliters (1/2 cup) plant milk
- 1/2 tablespoon apple cider vinegar
- 240 grams (2 cups) plain flour
- 1 teaspoon baking soda (bread soda)
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 teaspoon cinnamon
- 120 milliliters (1/2 cup) sunflower oil
- 150 grams (3/4 cup) brown sugar
- 225 grams (1 cup) mashed ripe banana
- 1 teaspoon vanilla extract
- Optional: Vegan chocolate chips and/or walnuts
Instructions
- Preheat the oven to 180°C (350°F).
- Lightly oil a bread loaf pan.
- Pour the vinegar into the milk and let sit on the side. This makes vegan buttermilk.
- Mix the flour, baking soda, baking powder, salt, and cinnamon in a large mixing bowl.
- Add the oil, sugar, mashed banana, and vanilla to the buttermilk.
- Mix the wet and dry mixtures evenly combined, but just barely—some lumps are okay. Overmixing will make the bread tough.
- Optional: Fold in chocolate chips and/or walnuts.
- Pour into the loaf pan.
- Bake for 45 minutes or until a toothpick comes out clean when you poke in the center.
