Chocolate Mousse

It’s chocolate…it’s mousse…’nuff said! There is simply no way to not love this smooth and creamy dessert. Yes, it involves tofu. Trust us on this one. For many vegans, this is their go-to potluck dish!

Ingredients

  • 340 grams of vegan chocolate. Many supermarket own-brand bars of dark chocolate are vegan!
  • 396 grams box of silken tofu, drained. You can find Clearspring brand silken tofu in health shops and some Supervalu’s, or Mori-Nu brand in some health shops or Asian food shops. (Asian food shops might also have other brands)
  • 2 teaspoons vanilla extract
  • 1 pre-made shortcrust (optional)

Instructions

  1. Chop the chocolate bar into pieces and melt in the microwave for 20 seconds at a time, stirring in between.
  2. Put tofu in a blender or food processor and blend until creamy.
  3. Add the chocolate and blend again.
  4. Add the vanilla and blend one final time.
  5. Pour into glasses, bowls, or pie crust.
  6. Place in the refrigerator and chill for at least 3 hours before eating.
