Chickpea Salad

Easy to make, and so satisfying. Some people say the texture is like tuna salad without the fishy taste.

Ingredients

  • 1 garlic clove, peeled
  • 1 15-ounce can (443 ml) of drained and rinsed chickpeas
  • 1/4 cup (60 g) Veganaise or any vegan mayo
  • 2 teaspoons mustard
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • chopped pickles (optional)
  • 2 tablespoons finely chopped celery (optional)
  • chopped peppers (optional)
  • grated carrot (optional)

Instructions

  1. Finely chop the garlic by hand or in a food processor.
  2. Mash the chickpeas by hand or in a food processor until desired consistency.
  3. Stir in the rest of the ingredients and taste for seasoning.

Notes

Eat on crackers or chips, or use as a sandwich filling.
