Ginataang Bilo-Bilo

Ginataang Bilo-Bilo is a beloved Filipino snack or dessert, often enjoyed in the afternoon.

This comforting dish features glutinous rice balls (bilo-bilo), saba, kamote, and sago, all simmered in rich, sweet coconut milk. For an extra layer of flavor, jackfruit or langka is commonly added. Ginataang Bilo-Bilo is a perfect treat, especially on a rainy day. Its versatility allows it to be enjoyed hot or cold, making it a delicious option for an afternoon snack, breakfast, or even dessert.

Ingredients

  • 2 cups glutinous rice flour
  • 3 cups of water
  • 2 cans (400 ml) of coconut milk or coconut cream
  • 1-1/2 cups cooked tapioca pearls (sago)
  • 3/4 cup sugar
  • 2 large sweet potatoes (kamote), peeled and cubed
  • 4 piece saging na saba, peeled and cubed
  • 1 cup jackfruit, cut into strips

Instructions

  1. In a bowl, combine 2 cups of glutinous rice flour with 1 cup of water. Mix with a fork until a dough forms. Scoop about half a spoonful of dough and roll it into small balls using your palms. Set aside.
  2. In a pot, combine 2 cups of water, coconut milk, and sugar. Bring to a boil over medium heat.
  3. Add the sweet potato cubes and cook for about 3 minutes, stirring occasionally. Then, add the banana cubes and cook for another 3 minutes.
  4. Once the sweet potatoes and bananas are nearly tender, add the prepared sticky rice balls. Let them simmer for about 5 minutes, stirring occasionally. The rice balls are done when they float to the surface.
  5. Add the jackfruit slices and cooked tapioca pearls. Let simmer for another 3-5 minutes or until all the fruits are tender and fully cooked.
  6. Keep in mind that the mixture will continue to thicken even after removing it from the heat. Serve hot or cold, depending on your preference. Enjoy!
