Saging/Mais con Hielo

When it comes to iced Filipino desserts, halo-halo is usually the first thing that comes to mind—and for good reason! It’s colorful, has lots of flavorful ingredients, and the most well-known of them all.

But there are plenty of other delicious options to explore, like saging or mais con hielo (banana or corn with ice). It’s also simpler and easier to make!

This refreshing treat features bananas caramelized in brown sugar, combined with chewy sago, creamy plant milk, and ice. You can also replace bananas with whole kernel corn which you can buy in cans from the grocery store.

Ingredients

  • Saging na saba
  • Brown sugar
  • Sago
  • Vanilla extract
  • Shaved ice
  • Plant milk of choice
  • Canned whole kernel corn

Instructions

  1. Cook the sago according to the package instructions. Set aside.
  2. Place sliced bananas in a pot with water and bring to a boil.
  3. Stir in the brown sugar and cooked sago.
  4. Stir in the vanilla extract and remove from heat.
  5. Allow the mixture to cool completely.
  6. To serve, top with shaved ice and pour in your choice of plant milk.

Notes

For Mais con Hielo:

  1. Drain the canned whole kernel corn and transfer it to a large bowl.
  2. Mix in your plant milk of choice.
  3. Sweeten to taste with sugar.
  4. Top with shaved ice and serve.
