Palitaw literally means “to surface” in Filipino. It is a popular rice cake that’s made of glutinous rice, shaved coconut, and toasted sesame seeds.
It is a common afternoon snack in Filipino households and can be bought even from local karinderyas as a sweet dessert.
Let’s try to make our own palitaw at home! Here’s how:
Ingredients
- 2 cups glutinous rice flour
- 1/2 cup white sugar
- 1 cup water
- 1/2 cup roasted sesame seeds
- 1 cup grated coconut
Instructions
- In a bowl, combine glutinous rice flour with water and mix until a dough forms. Scoop about 2 tablespoons of dough and shape it into a ball.
- Flatten the ball using the palm of your hands.
- Bring a pot of water to a boil. Add the flattened dough pieces and cook until they float.
- Once they float, remove them from the pot and let the excess water drain.
- In a separate bowl, mix sugar and roasted sesame seeds.
- Roll each rice cake in grated coconut, then in the sugar-sesame seed mixture.
- Arrange on a serving plate and serve.
