Chocolate cake this good that’s plant-based, too??? It’s the perfect celebration cake, even if all you’re celebrating is having a delicious chocolate cake to eat!

Ingredients

Cake

  • 180 grams (1-1/2 cups) plain flour
  • 100 grams (1 cup) sugar
  • 1 teaspoon baking soda (bread soda)
  • 1 teaspoon salt
  • 4 tablespoons cocoa powder
  • 1 teaspoon vanilla
  • 1 tablespoon white vinegar
  • 5 tablespoons sunflower oil
  • 240 milliliters (1 cup) water

Simply Fudgy Frosting

  • 115 grams (1/2 cup) Naturli or any other vegan butter
  • 75 milliliters (1/3 cup) plant milk of your choice
  • 1 teaspoon vanilla
  • 65 grams (2/3 cup) cocoa powder
  • 360 grams (3 cups) powdered sugar

Instructions

  1. Preheat oven to 350°F (180°C).
  2. Lightly grease and flour a 9 inch round cake pan.
  3. Whisk the dry ingredients together in a bowl.
  4. Add the vanilla, vinegar, oil, and water. Gently mix. A few lumps are okay—if you overmix the batter, the cake will be tough.
  5. Pour into the prepared pan and bake for 25 minutes. Test by poking a toothpick or knife into the center. If it comes out gooey, bake for another 8-10 minutes.
  6. While cooling, prepare frosting by melting the vegan butter in the microwave or on the stove.
  7. Whisk in the milk and vanilla, then the cocoa and sugar.
  8. Add more sugar to thicken or more milk to thin the frosting to a glaze.
  9. Wait for cake to cool fully before frosting.
