Chewy Oatmeal Cookies

Soft and chewy oatmeal cookies are a childhood favourite of…well, just about everyone! And now you can enjoy a plant-based version of these delicious treats.

Ingredients

  • 135 grams rolled oats
  • 180 grams all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 115 grams vegan butter, room temperature
  • 100 grams brown sugar, packed
  • 100 grams white sugar
  • 60 milliliters plant milk of your choice
  • 65 grams raisins

Instructions

  1. Preheat the oven to 180°C.
  2. Line a cookie tray with parchment paper.
  3. Whisk together the oats, flour, baking powder, and baking soda in a bowl and set aside.
  4. Beat the butter and both sugars together until light and fluffy (by hand or with a mixer).
  5. Add in the dry ingredients and mix until combined with the butter and sugars—the dough will be crumbly.
  6. Slowly pour in the non-dairy milk and raisins. Mix only until a dough has formed—about 1 minute.
  7. Scoop and roll into balls, 2 tbsp per ball, and set in the fridge for at least 15 minutes.
  8. Place dough balls 2 inches apart and bake for 14-16 minutes, until golden around the edges.
