Retro Mac and Cheese

Ingredients

  • 1 pound (454g) dried pasta
  • 1 cup (120g) flour
  • 1 cup (90g) nutritional yeast
  • 2 teaspoons salt
  • 1 teaspoon pepper
  • 2 cups (480ml) water
  • 1/2 cup (120ml) oil
  • 1 tablespoon dijon mustard
  • 1 tablespoon apple cider vinegar

Instructions

  1. Cook pasta according to package.
  2. Whisk together dry ingredients.
  3. Whisk the water, oil, mustard, and apple cider vinegar into the dry mix.
  4. Gently cook on medium-low heat, whisking often, until it thickens.
  5. Taste and adjust seasonings. If you want it thinner, add more water.
  6. Stir into freshly cooked pasta.
