Hummus Veggie Wraps

When you need a quick lunch or snack to go, there’s nothing like the satisfying combination of hummus and avocado!

Ingredients

  • 1 large or extra large flour tortilla
  • 1/4 cup (60g) hummus
  • 1 cup (126g) shredded or chopped vegetables
  • 1 ripe avocado
  • Vegan deli slices (order online), or Unmeat Luncheon Meat which is available in grocery stores (optional)

Instructions

  1. Lay the tortilla out on the counter or a plate. Spread it with a thick layer of hummus.
  2. Top with the vegetables, avocado, and deli slices if using.
  3. Roll up and eat like a burrito.

Notes

Tip: If your local grocery store has a salad bar, it can be a convenient way to get a variety of cut, cleaned vegetables.
