Peanut Sauce

There’s nothing like peanut sauce to add an instant Asian twist to everything from grilled tofu to sticky rice, and roasted veggies to stir fries.

Ingredients

  • 1/2 cup (115 g) peanut butter
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon maple syrup or sugar
  • 3 tablespoons soy sauce
  • 1 teaspoon dried ginger powder (or 1 tbsp fresh chopped ginger)
  • 2-4 tablespoons warm water (start with 2 and add more for a thinner consistency)
  • 1/8 teaspoon chili powder (optional)

Instructions

  1. Blend all ingredients and pour over cooked rice or pasta.
  2. Add steamed vegetables or a side salad and have a filling, protein-rich meal.
